Maine Lobster Meat Quality lobster meat comes from the ocean. Fishermen's net lobster has always been grown naturally in the ocean, without antibiotics and hormones. They will be caught every day from the ocean and carefully selected by hand.  Lobsters that do not qualify will be returned to the ocean immediately.  After harvesting, we will cook immediately to keep tender flavors and vacuum according to orders. Fresh tail, knuckle, and claw lobster meat (TCK) shipped straight from the cold Atlantic waters to your table. Their meat is authentically plump, and their colors are vivid and pure. Make all dishes with lobster meat. Lobster meat can be eaten without a little garlic butter sauce or can be combined with many ingredients to create a variety of dishes. Be as creative as you like, and don’t be afraid to add lobster to ordinary recipes like vegetable soup or macaroni and cheese. Or you can create your favorite lobster dishes in minutes, like lobster stew, lobster salad, lobster pie, or even overstuffed lobster rolls. Lobster meat always adds something special to an everyday dish. Distinguish between fresh lobster meat and bad meat. A freshly cooked lobster will have its tail curl and the meat will be somewhat springy and firm, no mushy dried or jelly texture. Bad meat will give off an ammonia odor. Lobster should be cooked properly, never overcooked or you’ll end up with rubbery and tough meat. The meat should be chilled and used right away or at least within a day or so. Note: Due to the hot weather, we will freeze them on the day we ship to make sure of the good quality. In addition, we also remove lobster shells for you, or when you want to make it your own, we still have lobsters available, see the Lobster category on the website.
