Mangalitsa Collar Steaks (Coppa Steak)

Avg 8oz. Also known as the Coppa steak. This cut is well-marbled and delicious from the top part of the shoulder.

--Allow to thaw and season or marinate to your liking. Our favorite way to cook these steaks is the reverse sear method:

Preheat oven to 200 degrees F

Apply salt & pepper to both sides

Roast in oven on a baking sheet until internal temp reaches 130 degrees F

Remove from the oven and sear both sides over high heat on the grill or a scorching cast iron skillet—about 1 min per side.

Allow to rest for a few minutes. Slice, and enjoy!
