I have a friend who has a gift for baking bread and has taken sourdough to the next level!  Brenda got really sick about 24 years ago and what the doctors thought was mold in her house actually turned out to be a severe gluten intolerance.  So for the sake of her health, she stopped making bread.  Last year sometime, a friend had given her some sourdough starter and after she attempted to make her first loaf and failed, she started doing some research about sourdough!  She discovered that if she would allow the sourdough bread to rise for 48 hours that the fermenation process will break down the gluten to where there is less gluten than in gluten free bread.  And the best part?!?  After 24 years, Brenda is able to eat bread again!  And Brenda really has something special because her bread tastes like no other bread I have ever had before!  Brenda only uses the highest quality of organic flour and has recently started grinding her own flour as well!  Did I say this bread is special??  Try it for yourself and taste the difference!
