Their farm sits on a beautiful mountainside where we raise cattle, pigs and chickens. For many years, our family took pride in raising organic dairy products, but today, we specialize in raising grass-based beef. Wicked Quail & Pork is operated and run by a 3rd generation farmer and her family in Vassalboro, Maine. They focus on sustainable, humane, and pasture-raised agriculture. They work with the natural surroundings to give their livestock the best life possible - through practices such as grazing our pigs under the wild apple trees in the fall. They will be caught every day from the ocean and carefully selected by hand.  Lobsters that do not qualify will be returned to the ocean immediately.  After harvesting, we will cook immediately to keep tender flavors and vacuum according to orders. Fresh tail, knuckle, and claw lobster meat (TCK) shipped straight from the cold Atlantic waters to your table. Their meat is authentically plump, and their colors are vivid and pure. Make all dishes with lobster meat. Lobster meat can be eaten without a little garlic butter sauce or can be combined with many ingredients to create a variety of dishes. Be as creative as you like, and don’t be afraid to add lobster to ordinary recipes like vegetable soup or macaroni and cheese.
