We are a five generation small town livestock and grain family farm. A father son duo, with our spouses and kids highly involved in our farm operation. We have a great passion for livestock and raising high-quality, certified red angus cattle. 

We have been involved in agriculture our whole life, and we are eager to share our passion for livestock with others and the next generation. Our kids enjoy being involved with the farm, and are learning to carry on our livestock legacy.

Chuck Eye Roll

The Chuck Eye Roll comes from the chuck primal, and it is often cut into steaks and roasts. These cuts are tender and rich in flavor. 

Chuck roll roasts are budget friendly cuts perfect for making fork tender fall apart roast, great for shredded beef. 

Due to the high amount of marbling in the chuck these roasts are best seasoned with salt and pepper and then smoked or cooked low and slow.

I love that I have found Schmidt Beef. Now beef bundles are going to be shipped to my Colorado family as gifts from now to infinity. They grew up in Iowa so they know good beef when they taste it. My sister is some what of a steak aficionado and she says it’s the best she’s had in a great long while ( probably since she moved away from Iowa) and can’t wait to cook her next one.
