Sirloin Steak with Chimichurri & Roasted Sweet Potatoes

High Protein & Easy recipe!

If you’re looking for a dinner that’s comforting, flavorful and packed with protein, this sirloin steak meal checks all the boxes. Lean sirloin delivers high‑quality protein, roasted sweet potatoes add natural carbs and fiber, and a fresh chimichurri sauce brings everything together with bright, herby flavor.

Why We Love This Meal

Sirloin is one of our favorite lean steak cuts. As a simple rule of thumb, any beef cut with “loin” in the name is typically leaner and a heart‑healthier option while still delivering great flavor. It’s naturally lower in fat than many steaks but still full of beefy flavor and incredibly versatile. An 8‑ounce cooked sirloin steak provides roughly 45–50 grams of protein, making it an excellent choice for anyone focused on building muscle, staying full longer, or simply adding more protein to their day.

Altogether, this dinner comes in around 55–60 grams of protein, making it a perfect high‑protein, balanced meal.

Pan‑Seared Sirloin Steak

Ingredients

  • 2 sirloin steaks (6–8 oz each)

  • Salt and black pepper

  • 1 tablespoon high‑heat oil (avocado, canola, or light olive oil)

  • 1–2 tablespoons butter

  • Optional: garlic cloves, rosemary or thyme

Instructions

  1. Remove steaks from the fridge 20–30 minutes before cooking and pat dry with paper towels.

  2. Season both sides generously with salt and pepper.

  3. Heat a heavy skillet over medium‑high heat until hot. Add oil and let it shimmer.

  4. Place steaks in the pan and sear for 3–4 minutes per side, depending on thickness.

  5. After flipping, add butter and optional garlic or herbs. Tilt the pan and spoon melted butter over the steaks for 30–60 seconds.

  6. Cook until desired doneness (130–135°F for medium‑rare, 140–145°F for medium).

  7. Remove from pan and rest for 5–10 minutes before slicing.

Chimichurri Sauce

Ingredients

  • ½ cup olive oil

  • 1 tablespoon of wine vinegar

  • ½ cup fresh parsley, finely chopped

  • 2 cloves fresh garlic, minced

  • 2–3 tablespoons finely chopped onion or shallot

  • ½ teaspoon salt (or to taste)

  • ¼ teaspoon black pepper

  • Optional: red pepper flakes, squeeze of lemon

Instructions

  1. Finely chop the parsley, garlic, and onion and add to a small bowl.

  2. Whisk in olive oil, vinegar, salt, and pepper until well combined.

  3. Let the sauce sit for 10–15 minutes so the flavors meld.

  4. Spoon generously over sliced steak just before serving.

Roasted Sweet Potato Cubes

Ingredients

  • 2 large sweet potatoes, peeled and cubed

  • 1–2 tablespoons olive oil

  • Salt and pepper

  • Optional: garlic powder, paprika, chili powder, cinnamon

Instructions

  1. Preheat oven to 425°F.

  2. Toss sweet potato cubes with olive oil, salt, pepper, and any seasonings.

  3. Spread in a single layer on a baking sheet.

  4. Roast for 25–35 minutes, flipping halfway, until tender and lightly crisp on the edges.
