We're the Barnards, and we have been farming and raising cattle in Arizona for over 20 years. In the summer of 2020, we took a chance and bought a Wagyu bull to develop more consistency with our beef. The combination of the Wagyu bull with both our Angus and Charolais cows has turned out to be a beautiful pairing! We raise our American Wagyu on the ranch, bring them to farm to feed/finish them, and feed them our alfalfa, grass hay, and corn that we grow right here on the farm. We are proud to share our high-quality, American Wagyu beef with you!

A luxurious, hearty cut perfect for slow cooking and creating rich, flavorful dishes.
Beef Short Rib Osso Buco is a decadent twist on the traditional Italian dish, made with bone-in short ribs that are braised to perfection. The marrow from the bones infuses the dish with deep flavor, while the tender meat becomes melt-in-your-mouth delicious. Ideal for braising or slow-cooking, this cut offers an elevated dining experience.
Osso Buco, which means "bone with a hole" in Italian, refers to the marrow-filled bone in the center of the short rib.
This cut is perfect for long, slow braises that extract all the flavor from the marrow and meat.
Traditionally served with gremolata (a mixture of lemon, garlic, and parsley) to enhance its rich flavor.
Rich in collagen, which supports joint health, skin elasticity, and gut health.
High in protein, which supports muscle growth and repair.
Packed with essential vitamins and minerals from the marrow, including iron, calcium, and zinc.
Brown the short ribs first to develop a rich, caramelized flavor before braising.
Add vegetables, herbs, and wine to the braising liquid for added depth of flavor.
Slow cook or braise for 2-3 hours until the meat is tender and the marrow easily comes out of the bone.
Braise at a low temperature (around 300°F) for several hours to break down the connective tissue and achieve tender, flavorful results.
For best results, cook to an internal temperature of 190–200°F.
