After years of rave reviews over the beef John & Sue Ebensberger were producing on their hobby farm, West Forty (40 acres west of Greene, IA) was born!
We have been selling individual cuts and custom wholesale options in Greene since 2013 and Des Moines since 2016. In September 2019, John & Sue purchased the grocery store in Greene, renaming it West Forty Market. You can find all of our locally raised meats at the store!
After being a full time vendor at the Des Moines Farmers Market and offering delivery around the metro, Teresa (their daughter) decided to open her own retail store in Ankeny, IA in May 2021. West Forty Market is located in Uptown Ankeny and features over 120 cuts of beef, pork, chicken, bison, lamb and turkey - all raised on local Iowa farms and butchered in Iowa. We also feature over a dozen local products, including pasta, rubs, sauces and honey.
Grass-fed, grain-finished and raised with love and care ... we are confident you'll enjoy the amazing flavor and tenderness of our meats!

It’s a great choice for roasting, grilling, or even slicing into medallions for a variety of recipes.
Its tender texture and mild flavor make it a favorite for many, as it pairs well with a variety of seasonings, marinades, and sauces. Whether you're cooking for a crowd or a simple family dinner, pork tenderloin offers an easy-to-prepare, high-quality cut that’s sure to please everyone at the table.
Pork tenderloin is one of the leanest cuts of pork, making it a great option for those looking for a healthier protein choice.
Despite being lean, pork tenderloin is still incredibly tender and juicy when cooked properly, especially when marinated or cooked with the right techniques.
Pork tenderloin can be cooked whole or sliced into medallions, allowing for versatility in preparation.
It’s known as the “filet mignon” of pork, often used in gourmet dishes due to its tenderness.
Protein: Pork tenderloin is packed with high-quality protein, supporting muscle repair, immune function, and overall health.
B Vitamins: Rich in B6 and B12, which help with energy metabolism and maintaining a healthy nervous system.
Iron & Zinc: Contains iron, which is essential for oxygen transportation in the blood, and zinc, which supports immune health and cell growth.
Roast or Grill for Tenderness: For optimal flavor and tenderness, roast pork tenderloin in the oven at 400°F (200°C) for about 25-30 minutes or grill it on medium-high heat for 4-5 minutes per side.
Sear Before Roasting: To enhance flavor, sear the pork tenderloin in a hot pan before roasting. This creates a nice crust on the outside while keeping the inside juicy and tender.
Marinate for Extra Flavor: Pork tenderloin takes well to marinades. Consider using garlic, herbs, soy sauce, or apple cider vinegar for added flavor.
Rest Before Slicing: Allow the pork tenderloin to rest for 10 minutes after cooking before slicing. This ensures the juices redistribute for a more tender and flavorful bite.
Pork tenderloin should be cooked to an internal temperature of 145°F (63°C) for a juicy, tender result. After cooking, let it rest for at least 3 minutes before slicing to lock in the juices.
